Lion's Mane & Oyster Mushroom Pesto Pizza

There's something special about homemade pizza, especially when it's topped with fresh gourmet mushrooms. Crispy crust, vibrant pesto, creamy mozzarella, and perfectly sautéed mushrooms come together to create a simple meal that tastes like it came from your favorite wood-fired pizza restaurant.

Lion's Mane has a tender, meaty texture that's often compared to crab or lobster, making it a delicious addition to pizza and other savory dishes. Oyster mushrooms have a delicate, earthy flavor that pairs beautifully with pesto, fresh mozzarella, and roasted tomatoes.

Whether you're trying gourmet mushrooms for the first time or you're already a fan, this recipe is an easy way to bring restaurant quality flavor into your own kitchen.

  • Quick and easy to make

  • Perfect for weeknight dinners or pizza night

  • Highlights the unique flavor and texture of fresh gourmet mushrooms

  • A great introduction to cooking with Lion's Mane and Oyster mushrooms

Grower's Tip

For the best flavor and texture, don't overcrowd the mushrooms while sautéing. Cooking them in a single layer allows excess moisture to evaporate so they brown beautifully instead of steaming.

If you've never made homemade pizza dough before, don't worry. It's easier than most people think and well worth the extra effort. Store-bought dough works wonderfully too if you're short on time.

We hope this recipe inspires you to try something new in the kitchen and discover just how versatile fresh gourmet mushrooms can be.

Recipe:

Prep Time - 30 minutes

Cook Time - 10 minutes

Servings - 3

Ingredients

  • 1 pizza dough (homemade or store-bought) - split into 2 pizzas, or make one large pizza

  • 6–8 oz Lion's Mane mushrooms, torn into bite-sized pieces

  • 4–6 oz Oyster mushrooms

  • ½ cup basil pesto

  • 6 oz fresh mozzarella, sliced

  • ½ cup cherry tomatoes, halved

  • 2 tablespoons grated Parmesan cheese

  • 1 tablespoon olive oil

  • Fresh basil or parsley for garnish

  • Salt and freshly ground black pepper

Directions

1. Prepare the Oven

Preheat your oven to 500°F with a pizza stone inside. If you don't have a pizza stone, a baking sheet works just as well.

2. Prepare the Dough

Roll your pizza dough on a lightly floured surface until it reaches your desired thickness. Place it on parchment paper to make transferring it to the oven easier.

3. Cook the Mushrooms

Heat the olive oil in a skillet over medium heat.

Add the Lion's Mane and Oyster mushrooms and sauté for about 5 minutes, stirring occasionally, until lightly browned and tender. Season with salt and pepper.

4. Assemble the Pizza

Spread an even layer of pesto over the dough, leaving about a ½-inch border around the edge.

Top with:

  • Fresh mozzarella

  • Sautéed mushrooms

  • Cherry tomatoes

  • Parmesan cheese

Feel free to add any of your favorite pizza toppings.

5. Bake

Carefully slide the pizza (still on the parchment paper) onto your pizza stone or baking sheet.

Bake for 7–10 minutes, or until the crust is golden brown and the cheese is melted and bubbling.

6. Finish & Serve

Remove the pizza from the oven and let it cool for 2–3 minutes.

Finish with fresh basil or parsley and an optional drizzle of olive oil or extra pesto before slicing and serving.

Enjoy!
